Masala Vadai mixture ready to be shaped and deep fried
Masala vadai has always been my favorite tea time snack. I just love the crispy crunchy and soft in the inside vadai.
Ingredients
1 cup split yellow channa dal or kadalai paruppu
1 medium sized onion, chopped
1 Green Chilli - chopped
1 tablespoon fennel Seeds / Sombu / Saunf - 1 tblspn
1 tablespoon chopped garlic - about 3 cloves of
Ginger - about a 1 inch piece
Curry leaves - a small handful chopped
Salt to taste
cooking oil, for deep frying
Direction
1. Soak channa dal for about 1 hour. After about an hour drain the dal. Add the dal and the
fennel seeds into food processor or grinder and pulse for a few seconds to get a course paste. If the paste is fine then the vadai will not be crunchy. Transfer the paste to a bowl.
2. Next add the chopped green chillies, onions, ginger garlic, chopped curry leaves and salt into the channa dal course paste and mix well.
3. Heat oil in a wok on medium heat for deep frying.
4. Take a small portion of the vadai mixture and roll it slightly. Then flatten the ball to make a disc.
5. Gently add the masala vadais into the hot oil and fry until the vadais turn golden brown.
6. Drain on kitchen towels and serve hot.
